El Autentico Guacamole
10 Kermoyan avocados (15 Hass can be substituted)
24 oz. Pace Picante salsa, Hot
6 roma tomatoes, diced
1 small white onion, finely diced
2 bunches cilantro, finely chopped
6 serrano peppers, finely diced (including seeds)
1 tsp salt (to taste)
juice of 1 lime
black pepper to taste
Combine avocados, salsa, serranos, onion, lime juice and salt; combine ingredients together. Add cilantro, tomatoes and black pepper; stir gently.

2 ½ avocados
2/3 C roma tomatoes, finely diced, no seeds
¼ C shallots, finely dried
3Tbs cilantro, finely diced, no stems
2/3 tsp garlic, finely diced/minced in oil
½ small jalepeno pepper, finely diced (wear gloves)
2 Tbs lemon juice
1/3 goat cheese, crumbled and diced
Puree everything except cheese and tomatoes. Salt and pepper to taste. Mix in cheese and tomatoes. Cover with plastic wrap and let set ½ hour.

Black Bean Guacamole
1 medium red onion, diced small
2-4 yellow chiles, diced
2-4 jalepeno chiles, diced
10 green chiles, roasted and diced
5-6 tomatoes, diced
1 C black beans
4 cloves garlic
2 tsp cayenne powder
Add chiles and jalapenos to taste and fresh lemon juice.
