Recipe Winners - 2000

Best Guacamole

1st PLACE:  Tracy Riddle, Camarillo

Antipasto Guacamole

4 Avocados
1 can Artichoke Hearts
7 oz. Jar Roasted Red Peppers
cup Greek Olives
2 Tbsp. Chopped Onion
I Tbsp. Chopped Garlic
Cup Tomatoes
Cup Pepperocinis
Salt, Pepper, Lemon Juice to taste
In a bowl mash the avocados. Chop remaining ingredients and mix with avocados. Season to taste.


2nd PLACE:

Veggie Guacamole

2 Ripe avocados
Juice of lemon
Salt and pepper to taste
1 Lrg. Tomato, diced
Cup Black Beans
1 ear Roasted Corn on the cob
2 Tbsp. Canned Jalapenos, chopped
1 tsp. Garlic, chopped
1 Tbsp. Green Onion, chopped
Mash avocado in a bowl. Add lemon juice, salt and pepper to taste. Mix all ingredients together and serve with fresh corn chips.


3rd PLACE: Eric Sanabia, Goleta

Dave’s Insanity Guacamole

1 Avocado
1 Tomato, peeled and chopped
3 drops Hot Sauce
Mash the avocados; mix in tomatoes and hot sauce. Serve and stand back.

 

Baked Goods - 2000

1st PLACE: Deborah Alliano, Santa Barbara

Mexican Savory Cheese Cake

2 cups Doritos chips
4 8oz. Cream Cheese
1 Eggs
2 Tbsp. Flour
1 can Mexican Tomatoes
Can Corn
Can Black Beans
1 each Red and green Roasted Peppers, chopped
1 Avocado, sliced
3 Tbsp. Butter, melted

Crush Doritos and add melted butter. In a deep pie pan form into piecrust. Mix cream cheese, eggs and flour until smooth. Pour half the mixture into the piecrust. Layer avocados, beans, peppers, corn and tomatoes. Top with remaining mixture. Smooth the top. Bake 25 minutes at 375 degrees. Remove from oven. Mix together 1 cup of sour cream and 1 Tbsp. flour and spread over the top. Bake another 10 minutes.

Cool on a wire rack. Serve cold or hot, with chips or over a salad.


2nd PLACE: Elaine Hyatt, Camarillo

Avocado Brownies

BROWNIES
20 Baker’s unsweetened chocolate squares
1 stick Butter
2 cups Sugar
1 cup Flour
3 Tbsp. Avocado, mashed
3 Eggs
1 tsp. Vanilla
1 cup Nuts - optional
Melt chocolate and butter in a microwave. Mix in remaining ingredients and bake at 350 degrees for 20-25 minutes. Cool and frost.

FROSTING:
1 box Powdered Sugar
3 Tbsp. Butter
1 tsp. Vanilla
1 Tbsp. Milk
1 Pinch of salt
Mix together and spread over brownies. Serve when cool


3rd PLACE: Nola Ferguson, Carpinteria

Nola’s Avocado Pie

1 Ripe Avocado, smashed
2 Pkgs. Cream Cheese
Juice of 1 lemons
1Tbsp. Lemon zest
1 can Eagle Brand Milk
Nuts of your choice, chopped

Make your favorite crumb crust pie shell. Mix first 5 ingredients together until nice and smooth. Take a handful of chopped nuts and sprinkle on the bottom of the piecrust. Pour in the avocado mixture and top with another handful of the nuts. Chill and it’s ready to eat!
